Sauces on the other hand are wet and applied to the meat (baste) for a sweet caramelized crust when meat is almost cooked. Applying sauces too early in the cooking process will cause it to get dry out and burn.
Smoke wood. Charcoal can transmit added flavor to your meat. Charcoal on its own just has a small amount of flavor but they add a lot of aroma. You should be able to strike a balance between the aroma from charcoal and the taste of meat. Adding too much wood will ruin the taste of your meat.

The Tappacue only monitors temperature. It does not come with a fan, nor is it able to run one. Therefore, technically it is not an automatic temperature controller.

Should look into fireboard themometer. It has the ability to add a fan.
